If you’ve got a bag of Ringtons Fruit & Seed Porridge in your cupboard, it isn’t just for breakfast. It makes a lovely base for chewy, wholesome flapjacks too.
The porridge itself is a mix of oat flakes and wholegrain spelt with juicy fruit and a bit of crunch from seeds, and a gentle hint of cinnamon in every mouthful. It’s high in fibre and plant‑based, so you’re starting with a feel‑good ingredients!
You will need:
- 300g (one bag) of Ringtons Fruit & Seed Porridge mix
- 160g margarine or butter
- 100g soft brown sugar
- 3 tbsp golden syrup (or honey)
Method:
1. Preheat the oven
Preheat your oven to 180°C (160°C fan). Line a square tin - about 20cm x 20cm - with baking paper so it’s easier to lift the flapjacks out later.
2. Melt the margarine
Put the margarine or butter in a microwave‑safe bowl and heat it until it’s melted and runny.
3. Mix everything together
Tip the porridge mix into a big bowl. Add the melted margarine (or butter), brown sugar and golden syrup (or honey). Give it a good stir until all the oats and seeds are coated evenly.
4. Press into the tin
Spoon the mix into your lined tin and press it down well with the back of a spoon or your fingertips. Getting it compact really helps the flapjacks hold together once baked.
5. Bake
Pop the tin in the oven for about 25 minutes. You can tweak this a bit:
- 20 minutes - softer and chewier
- 30 minutes - firmer with a bit of crunch around the edges
6. Cool & slice
Let the bake cool in the tin for around 10 minutes, then score into squares. Once fully cool, lift out the slab and finish cutting through the lines. Enjoy with a cup of Ringtons Breakfast tea.
