Springtime Recipe - Lemon Daisy Tartlets

With the milder weather here at long last, now is the ideal time to spend some time in the garden and get some jobs done ready for summer. But once done, you can reward yourself with that much-deserved mid-morning break; just you, your cuppa and a Lemon Daisy Tartlet.

A variation on the classic jam tart, it's a perfect for springtime treat and makes a fun family activity. 

Ingredients

  • Shortcrust pastry - ready made or home made pastry both work perfectly
  • Ringtons Lemon Curd, Jam, or Marmalade
  • Beaten egg for glazing
  • Flower shaped cookie cutter 
  • Butter for greasing
  • Icing sugar

Method

1. Preheat your oven to 190°C (170° fan, 375°F, gas mark 5).

Step 1

1. Grease a shallow muffin tin with butter to prevent sticking.

2. Flour your work surface and roll out your pastry to the thickness of a £1 coin.

3. Use the cookie cutter to cut out your flower tartlets.

Step 2

4. Pop the pastry flowers in to the tin.

 

Step 3

5. Spoon in a teaspoon of jam, marmalade or lemon curd in to each pastry flower - alternate for an added pop of colour. Be careful not to overfill!

 

 

Step 4

6. Bake for 15-20 minutes, or until the pastry is golden and cooked through. 

7. Place on a wire rack and allow to cool, then dust with icing sugar. 

8. Enjoy with a cuppa!
